For centuries, mint and citrus herbs have been treasured across cultures for their cooling, soothing, and uplifting properties.
Mint has been cultivated around the Mediterranean and across North Africa and the Middle East for thousands of years, and the habit of drinking it as an infusion is older than tea itself in much of that region. Peppermint is a natural hybrid of watermint and spearmint, first identified in England in the seventeenth century; spearmint is the older of the two, and the gentler.

Lemon verbena travelled the other direction. Native to Argentina and Chile, it was carried to Europe by Spanish botanists in the eighteenth century and became a fixture of French and Spanish herb gardens, where it is still known as verveine. Lemon myrtle is Australian, native to the subtropical rainforests of Queensland, and has been used by Aboriginal communities for generations. Its leaf contains one of the highest concentrations of citral found in any plant — higher than lemongrass, higher than lemon peel itself — which is why a small proportion of it perfumes an entire blend.
