It is lightly steamed green tea, much shorter than typical sencha. Different levels of steaming are different “mushi”s. Lighter steaming (30 seconds) will result in a lighter, cleaner, more delicate, more astringent flavor, as well as a lighter color. Do not use water over 75C or the flavor profile will be vanished.
