Recipies: Matcha Mango Popsicles
These tea popsicles are easy to make, refreshing, and healthy! Vegan, gluten-free, sugar-free, dairy-free, nut-free!
For the matcha half:
- 1 tsp Daily Matcha
- 2/3 cup coconut milk – full fat is recommended but use light if you wish
- 2-3 tsp agave, maple syrup or honey
For the mango half:
- 1 cup fresh mango, cubed
- ¼ cup coconut milk
- Juice from ½ lemon
- Combine first three ingredients, blend until smooth. Set aside.
- Combine last three ingredients, blend until smooth. Set aside.
- You have two options:
- Pick a layer to be at the tip and make that one first. Pour that one into your popsicle tray. Tap a few times to remove any possible bubbles, then put into the freezer. I would recommend letting it sit for 5-10 minutes. Note: The matcha mixture takes longer to freeze! I would suggest starting with the same layer for all trays.
- While the first layer is setting, start your second layer, combine ingredients, blend until smooth.
- Take your popsicle tray out of the freezer and pour the second layer. Tap a few times to remove any possible bubbles.
- Put back into the freezer and allow popsicles to freeze completely, about 4 hours.
- Chill both mixtures in the freezer for a few minutes until slightly thickened. Give it a good stir then pour one into your trays. Note: I froze the mixtures for about 5 minutes (the matcha portion takes longer to freeze, so leave the mango portion out for a few minutes while matcha thickens), stir, then put back in the freezer and repeat a few times. Once it reaches a really nice, thick consistency then I pour into the popsicle trays.
- Pour the second mixture in. The two mixtures should be thick enough that they don’t mix together right away, so take a stick and give it a little swirl. If your mixtures aren’t thick enough don’t worry! They’ll already be combined nicely so just leave them, don’t stir too much.
- Put the tray into the freezer and allow popsicles to freeze completely, about 4 hours.
Make this with any fruits, matcha pairs nicely with so many different ingredients. Swap mango for peaches, berries, pears, melon. Another great addition is organic Acai Berry Powder, just mix in with the matcha (or create a third layer by mixing 2/3 cups of coconut milk, 2 tsp sweetener of choice and 1 tsp of Acai Berry Powder). You can also skip fruit all together and use cacao powder and 2/3 cup coconut milk (instead of ¼) and add a handful of organic dark chocolate chips after you’ve finished your stirring and freezing routine. Perhaps even a dash of peppermint extract? YUM!
